School Lunches You Can EASILY Make!
Packing lunch for all three of my sons would take a lot of time and energy, so to simplify this task, I put my kids in charge! I mean, getting my kids out the door by 8 a.m. is enough to put on my plate, am I right?
I do though like to give them healthy options that are not only easy, but use the ingredients I have available in our fridge and pantry. I know what you're thinking, "easier said than done", and I totally agree. It's easy to find yourself repeating the few same things and getting bored of it one month into the school year. This is when a lot of us turn to pinterest!
Pinterest and bloggers have so many great ideas for lunches, but let's be honest with ourselves here... I need something that either I or my kids can make quickly, that isn't super processed, but doesn't require an extra trip to the grocery store for special ingredients. I've pinned 100s of lunches that I never got around to making because I picked ideas that took more time than I have to make, and ingredients I didn't normally have on deck.
So in the interest of taking the headaches out of your lunch research, here are 3 simple ideas (which amount to literally hundreds of ideas) that don’t make me want to buy an industrial crate of Lunchables and call it a day.
#1 - KABOBS! What I looooove about these is that I can make endless combinations of whatever we have in our fridge, and regurgitate it to my kids in a new fun way.
#2 - USING WRAPS in new ways! Also another great way to reuse the food that you have in your fridge!
Pictured we have a PB&J with a banana, a fun twist on pizza ingredients, and chicken & avocado salad.
#3 - Bust out your muffin pan! This is a serious win in my house. Right after dinner I will throw the leftovers into a muffin tin, and bam! Lunch is checked off and no food went to waste.
Rice and vegetables, leftover tacos, heck even ham and mac & cheese! The options are endless.
You've totally got this. & If you drop the ball one week, (or month), don't get discouraged! I'm right there with you.
So CHEERS to doing our best to not making a PB&J sandwich everyday. I'm all about keeping things SIMPLE and OBTAINABLE for lunches this year, and I'm not going to tell you to go buy A SINGLE INGREDIENT! Whose with me?
